Onion Soup
ingredients
- 2 1/2 lbs of yellow onions, cut up
- 1/4 lb of unsalted butter
- 1 1/2 cup of dry white wine
- 1/2 cup of dry sherry
- 1/2 cup of Brandy or Cognac
- 4 cups of beef broth (or chicken broth or veal stock)
- 1 Bay leaf
- 1 tablespoon of pepper
- __ grated Emmental cheese
- 8 sliced pieces of bagette bread toasted with butter and parmesan cheese

Oven at 400 degrees

Melt the onions with butter & bay leaf till light brown (app. 20 min.)

____ with the sherry & brandy and simmer uncovered for 5 minutes

Add the broth, salt and pepper, cook till boiling (app. 20 min.)

Remove the bay leaf, add salt & pepper as needed

Put into serving cups, topped with the bread pieces and grate with grated parmesan

I used this time a souffle dish to make it easier to transfer the broth in dish and top it with slices bread already toasted. Cover the all soup with bread and cheese (emmental or parmesan) and put in oven until cheese melted and gold.
