Mamma 'Lec's Fruit Salad

ingredients

  • 1 cup pineapple or juice
  • Juice of 1 lemon
  • Juice of one orange
  • 1/4 t salt
  • 1/2 c sugar
  • 1 T cornstarch
  • 2 beaten eggs
  • 1 cup whipping cream
  • 1 large can fruit cocktail

directions

Mix cornstarch, sugar, salt, Mix fruit juices, ten add to dry mixture and cook in top of double boiler for 20 minutes keeping stirred. Remove from heat and add well beaten eff yolks. Cook for additional 5 minutes stirring constantly. Remove from fire and add stiff beaten egg whites. Cool and store in refrigerator until ready to use. Before serving, add drained fruit salad and fold in whipped cream.

This was something that Papaw's mother made and was on the table every holiday. The violet colored flower petal shaped bowl that was used is a cherished Pickle family antique.
