Tex-Mex Bean Dip
I’ve never met anyone who didn’t love this one. It’s fantastic!
ingredients
- 1 t vegetable oil
- 1/2 c chopped onion
- 2 minced garlic cloves
- 1 can black beans, drained and lightly mashed
- 1/2 c diced tomato
- 1/3 c mild picante
- 1/2 t cumin
- 1/2 t chili powder
- 1/4 c shredded Monterey Jack cheese
- 1/4 c chopped cilantro
- 1 T lime juice

Heat oil in skillet over medium. Add onion and garlic and sauté 4 minutes.

Add beans, tomato, picante, cumin and chili powder – cook 3 minutes or until thick, stirring.

Remove from heat and add cheese, cilantro and lime juice. Stir well. Serve warm with tortilla chips.
