Cornbread Chili Bake
ingredients
- 1 lb. browned ground beef
- 2 cans Stagg Chili
- 1 cup salsa or Pace Picante Sauce
- 1 box Jiffy Corn Muffin Mix
- 1 egg
- 1/3 cup milk
- 1 can drained Mexicorn
- grated cheese

Stir together meat, chili, salsa. Then pour mixture into a 9x13 baking dish.

Stir together muffin mix, egg, milk. Fold in Mexicorn.

Spoon blobs of cornbread batter over chili mixture. Top with cheese.

Bake at 400° for 20–30 minutes.
notes
Lower fat version: replace beef with 1/2# ground turkey and use Stagg Silverado &/or Vegetable Garden Chili.
