Flourless Peanut Butter Cookie
ingredients
- 1 cup peanut butter (creamy or chunky)
- 1 c granulated sugar
- 1 large egg
- 1 tsp. vanilla
- 1 tsp. baking soda
directions
Preheat oven to 350. Spray baking sheets with Pam. With an electric mixer, beat peanut butter and sugar until combined. Beat in egg and vanilla. Sprinkle Baking soda over mixture and beat until combined. Roll teaspoon size pieces of dough into balls, roll balls in additional sugar, and arrange on the baking sheet 1-inch a part. Make crisscross pattern on cookies with the tines of a fork. Bake cookies 10 minutes until puffed and pale golden. Let cookies cool completely on baking sheet. This is important because these cookies will be fragile when hot from the oven and need time to set up.
