THAI FISH CAKES
These are soooo simple and soooo delicious!
ingredients
- 185g can tuna in brine
- 2 tblspns Thai green curry paste
- 1/4 cup coconut cream
- 2 tblspns cornflour
- 1 egg
- 2 tblspns chopped coriander
- 1 cup fresh breadcrumbs
- 1/4 cup peanut oil
- 1/4 cup sweet chilli sauce with ginger
- 1/2 cup soy sauce

Drain tuna well.

Place tuna in a food processor or blender with Thai green curry paste, coconut cream, cornflour, egg and coriander.

Process until combined but not paste-like.

Add breadcrumbs and combine

Take tblspns of mixture and shape into balls. Press with hands to flatten cakes

Heat oil in a frying pan and cook fish cakes on each side for 1-2 minutes or until lightly golden.

Serve with Sweet Chilli Dipping Sauce

Mix sweet chilli sauce and soy sauce together to make the dipping sauce
