Rice PIlaf
ingredients
- 1 tablespoon extra virgin olive oil (evoo)
- 1 1/2 cups white rice
- 2 1/2 cups chicken broth
- 1 cup frozen peas
- 1 cup shredded sharp white cheddar cheese
directions
In a large saucepan, heat evoo over medium heat. Add rice and toast until light brown, about 4 minutes. Stir in broth and bring to a boil - turn down to medium low heat, cover and cook for 15 minutes. During the last 3 minutes, stir in peas and cheese.
