Easy Red Curry Prawn Dish to Impress!

Red Curry Sauce and Green Prawns.
ingredients
- Onion 1 or 2
- Garlic 1 clove
- Trident Red Curry Paste - 1/2 packet
- Corn either tin or pkt tiny ones
- Snow peas -as many as you like
- Bean shoots - few handfuls
- Coriander (fresh or jar)
- Kaffir leaves few teaspoons out of jar)
- Coconut milk or Carnation milk 2 cans
- fish sauce (couple of splashes)
- sweet chilli sauce (couple of splashes)
- lime juice

Cook onion lightly in oil in wok (or similar pan) Add curry paste and coconut milk and sauces to your taste.

You should have quite a lot of liquid.

Add snow peas, tiny corn and any other veges you prefer.Cook till nearly tender and then add peeled green prawns and cook till tender. (Only a few minutes)

Add more coconut milk/milk/carnation if necessary.

Add bean shoots last.

Serve with rice in a bowl.

This recipe can be changed to use whatever you have in the fridge or cupboard. It is a good standby as you can have tins of corn beanshoots carnation milk etc and curry paste in the cupboard. And packet of frozen green prawns in freezer.

The combination of the sauces is what makes it so delicious, but change quantities to your liking.
