Key Lime Pineapple Squares

Graham Base- 1 cup (250 mL) graham cracker crumbs
- 1/4 cup (50 mL) sweet shredded coconut
- 1/4 cup (50 mL) all-purpose flour
- 2 tbsp (25 mL) sugar
- 1/3 cup (75 mL) unsalted butter, melted
- One 300 mL tin sweetened condensed milk
- 4 large egg yolks
- 2/3 cup (150 mL) key lime or regular lime juice
- 1 tbsp (15 mL) finely grated lime zest
- 1 tsp (5 mL) vanilla extract
- 1 cup (250 mL) crushed pineapple, well-drained

Preheat oven to 350°F (180°C).

Line a 9-inch (23-cm) square pan with parchment paper so that it hangs over the sides.

For graham base, stir graham crumbs, coconut, flour and sugar to combine. Stir in melted butter to blend and press into prepared pan. Bake for 8 minutes and cool.

For filling, whisk all ingredients except pineapple until smooth, then stir in drained pineapple. Pour over cooled crust and bake for about 25 minutes, until edges bubble. Allow to cool to room temperature, then chill completely before slicing.
