Apple and Hazelnut Chicken

ingredients
- 3 pounds of chicken pieces or 6 chicken breasts
- 1/2 t thyme
- salt and pepper
- 4 T butter
- 2 T oil
- 1 cup onion
- 1/4 cup applejack or brandy
- 1 1/2 cups chicken broth
- 2 tart apples
- 2 T sugar
- 1/2 cup cream
- 1/4 cup hazelnuts, toasted and chopped

Season chicken with thyme and salt and pepper. In a large saute pan, heat 2 T butter and oil over medium-high heat. Add chicken and cook until browned. Transfer to a platter and cover.

Add onion to pan and cook over medium until soft and golden, about 20 minutes. Meanwhile, warm the applejack in another skillet and IGNITE (make sure the kids are around for this to get a great reaction. When the flames have subsided, pour over the onion. Add chicken and chicken stock, cover and cook for 15 minutes.

Meanwhile, melt 2 T butter and add apple slices and sugar.

Arrange the chicken on a platter, top with apples and keep warm. Continue to cook the chicken and add cream. Pour over chicken and apples and top with toasted hazelnuts.
