Banana Oat Muffins
ingredients
- 1 cup oat bran
- 1 cup oat flour (made in blender from oatmeal)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 1/4 c mashed ripe banana
- 2 eggs
- 1/2 cup lowfat milk
- 3 T honey
- 1/4 cup vegetable oil
directions
Combine dry ingredients in one bowl, wet ingredients in another, then add to wet and mix with fork until moistened. Bake in 375 oven for 20-25 minutes. Remove and cool. Store in refrigerator. Warm for 15 in microwave. Great source of fiber!

This is a Gammie recipe. Works great for old bananas or even old bananas that have been frozen.
