Mom's Get Well Soup
Perfect for when you are feeling a little under the weather.
ingredients
- 4 eggs
- 1/2 cup rice
- 2 quarts chicken broth (64 oz)
- Juice of 2 lemons (a little less than 1/4 cup)

Cook rice in chicken broth until almost tender. Remove soup from heat

Mix eggs and lemon juice in a separate large bowl. Slowly add soup to egg-lemon mixture to raise temperature of eggs without curdling. When egg-lemon mixture is close to the broth’s temperature, combine.

Do not bring to a boil after eggs have been added. Eggs will curdle; still edible but not as pretty.
