A beautiful simple dish - perfect for summer nights! Can be used as a snack, entree or entire meal.

ingredients

  • 500 grams pork mince
  • 6 shitake mushrooms
  • 150 grams water chestnuts
  • 150 grams fresh bean sprouts
  • 3 shallots
  • 2 spring onions
  • 1 teaspoon chilli (from jar)
  • 1 teaspoon ginger (from jar)
  • 1 tablespoon sesame oil
  • 1 tablespoons canola oil
  • 2 tablespoons Chinese rice wine or dry sherry
  • 3 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • juice of 1 lime
  • 1 to 2 iceberg lettuce (head removed and leaves separated to make cups)

    Dice up shitake mushrooms, shallots and spring onions. Drain and dice water chestnuts.

    Heat canola oil and sesame oil in a wok or frying pan until hot. Add the pork mince and most of the shallots and spring onions. Stir fry until browned off nicely.

    Add the Chinese rice wine or dry sherry, chilli and ginger. Then add the mushrooms, water chestnuts and bean sprouts and toss well.

    Stir in the soy sauce, oyster sauce and juice of lime, and toss through.

    Serve lovingly in lettuce leaf cups.
