Greek Lamb
This is the recipe I meant to give you ages ago! Great for dinner parties because you can make it before everyone gets there!
ingredients
- Approx. 800g Lamb backstrap (or leg steaks)
- 10 shallots
- 1 onion
- 2 cloves garlic
- Lemon zest from 1 lemon
- Oregano (fresh or dried)
- 1 cup white wine
- Extra virgin olive oil
- 1 sml tub natural yoghurt
- 1 tblsp honey
directions

1. Brown shallots, onion & garlic until translucent (set aside)

2. Season lamb with salt & pepper before browning in the same pan

3. Transfer shallots, onion and lamb to a nice deep baking dish
- 4
3. Add all other ingredients on top - oregano, lemon zest, a good dash of olive oil, yoghurt and honey on top.

4. Cover with alfoil and placed into a preheated 160degree oven for 1 1/2 hours.

Cannelini bean mash

1 can cannelini beans, garlic, olive oil, salt & pepper...whip in the blender!
