Classic Chicken Noodle Soup
ingredients
- 4 lb. chicken, quartered
- 3 qt. cold water
- 6 large sliced carrots
- 3 large stalks celery, sliced
- 3 small parsnips, sliced
- 1 large onion, cut in wedges
- 3 large sprigs parsley
- 1 Tbsp. salt
- 1/4 tsp. black pepper
- 1/2 lb. medium egg noodles

In stockpot, bring chicken and water to a boil, skimming boil. Add all but 2 cups of the carrots, the celery, parsnips, onion, parsley sprigs, 2 teaspoons of the salt and the pepper. Simmer, partially covered, until chicken is cooked, about 1 hr. Remove chicken to a plate. When cook enough to handle, remove the skin and bones; discard. Shred meat; set aside.

Strain broth. Add remaining carrots and salt. Simmer 10 min. Add noodles; simmer, covered, 7 min. or until carrots and noodles are tender. Add chicken meat and heat thoroughly.
