Cindy's Cinnamon Rolls
I can remember eating these every time we had company and at almost every family gathering. A million times better than a cinnabon, and worth the time to make!
ingredients
Rolls- 1 C oatmeal
- 1/2 C brown sugar
- 1/2 C butter
- 1/2 tsp salt
- 1 1/4 C boiling water
- 1 package dry yeast
- 1/4 C warm water
- 4 C flour, divided
- 1 egg
- Powdered sugar
- Milk
- Almond Extract or Orange Extract to taste (if desired)

Preheat oven to 350.

Mix together: oatmeal, brown sugar, butter and salt. Pour 1 1/4 C boiling water over the mixture. Let cool.

Take 1 package of dry yeast and mix with 1/4 C warm water. Once oatmeal mixture is cooled mix wet ingredients. Make sure it’s not too hot, or you will kill the yeast.

To the wet mixture, add:

1 C flour and the egg

Mix then add: 3 more C flour

Put in greased bowl in a warm area and let rise until doubled. Punch it down, and let rise again. After it rises a second time, put on floured surface and cut ball of dough into 3 equal pieces. Roll out to a rectangle 1/4 inch thick. Melt a stick of butter, divide over 3 pieces and put on dough. Sprinkle cinnamon sugar liberally onto the butter. Roll up the dough and slice in 1 1/2 inch slices. Put slices in greased pans and let rise again until double in size (about an hour). Bake for 15 – 20 minutes.
Frosting
Mix ingredients together to desired consistency. Frost when rolls are warm, not hot.
