Overnight Chile Eggs

ingredients

  • 8 eggs
  • 6 slices bread, crusts removed, cut in to 1/2 inch squares
  • 4 tbsp butter, cut into 1/4 inch squares
  • 2 cups milk
  • 2 cups green chilies, chopped
  • 1 1/2 cup grated Monterey Jack cheese or a mixture of your choice
  • Salt and pepper to taste

    1. In a large bowl, beat the eggs slightly.

    2. Add the bread, butter, milk, chilies, grated cheese, salt and pepper.

    3. Mix together and pour into a large rectangular baking pan that has been well greased.

    4. Refrigerate, covered at least 1 hour or overnight.

    5. Bake, uncovered in a 300 degree oven for 1 hour, until puffed and golden brown.
