Cousin Pamie's Bacalla
An old Italian dish passed down through generations
ingredients
- 1 large piece of cod that has been soaked in cold water for one week. Change water daily; (then drain water before use)
- 2 stalks of celery, washed,and chopped
- 1 med size onion, minced
- Olive Oil for frying
- 1-2 cans plum tomatoes w/juice - crush tomatoes
- Capers
- black olives
- green olives (crushed)
directions
Saute celery, onion and garlic in olive oil. Add plum tomatoes. Simmer 1/2 hour. Add the cod, capers, black olives and green crushed olives. Simmer for another 30 minutes.
