Wine & Dijon Marinated Pork Loin
This is not only healthy, but totally delicious!
ingredients
- 3 Pound Pork Tenderloin
- 3 Cloves Garlic Minced
- 1/2 Red Onion finely chopped
- 1/4 Cup finely chopped fresh parsley
- 3 TBS Dijon Mustard
- 1/3 Cup White Wine
- 1/4 Cup Plain Yogurt or Sour Cream
- 2 TBS Olive Oil
- 1 tsp black pepper
- 1/4 tsp Crushed Red Pepper Flakes
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1 cube chicken bouillon crushed
- 3TBS fresh lemon juice

Mix all above ingredients, pour into a gallon sized ziploc bag, add pork, marinate overnight.

Preheat oven to 350°.

Remove pork from bag, place in baking dish, pour marinade over pork and cover with foil.

Bake in preheated oven for about 1 hour 30 minutes or until internal temp reaches 160°.

Remove tenderloin from oven, let rest 20 minutes covered before slicing and serving.
