Lime Shrimp Salad

Lovely Spring and Summer Main Dish.... Beautiful presentation!!

ingredients

  • 1/2 cup minced fresh parsley
  • 1 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1/2 tsp grated lime zest
  • 1/2 tsp sugar
  • 2/3 cup vegetable oil
  • 1/2 fresh lime juice
  • 1 1/2 lbs unpeeled new potatoes, quartered
  • 1 lb unpeeled shrimp
  • Boston Lettuce leaves
  • 1 avocado sliced
  • 1 tomato cut into wedges

    Whisk first 7 ingredients. Blend well, set aside. Cook potatoes; toss warm potatoes, onion, and 1/2 cup lime marinade until veggies are coated. Marinade 2 hours stirring occasionally.

    Place shrimp in boiling water. Remove from heat, let stand - covered - for 3-5 minutes. (until pink)

    Peel and devein shrimp. Toss with 1/2 cup lime marinade in bowl. Cover and sit 2 hours, stirring occasionally.

Line a serving platter with lettuce leaves. Mound potato mixture in center along with Shrimp. Dip avocado slices in remaining marinade. Arrange avocado and tomatoes around the edge of the platter surrounding the shrimp and potatoes. Drizzle with remaining marinade. Yummy!!
