Marinating veggies ahead of time makes it easy to throw a meal together. At any point during the week, you can pull out some ingredients, skewer them, and throw ’em on the grill. Even oven-roasting is a tasty alternative. This recipe works well for a group, or for a family meal, with some leftovers for later. You can use simple stir-fry over rice to make an instant quick meal later in the week.

ingredients

  • Marinade:
  • 3 lg. cloves garlic
  • approx. 2-4"fresh ginger, sliced,
  • 1/8 tsp. cayenne
  • 2/3 c. brown sugar
  • 1 c. soy sauce
  • 1 c. white vinegar
  • Veggies
  • red or yellow bell pepper, 1 inch dice
  • jalapeño, cut in half
  • sweet onion, wedged
  • zucchini, sliced
  • summer squash, sliced
  • mushrooms
  • Pineapple, sliced
  • corn on the cop, cut 2 inch slice

    Add and process all ingredients for marinade and pour in to zip-lock bag.

    Prep your favorite veggies and set in air tight container. Pour in Marinade. set in frig for up to 6 days.

    Start grill, skewer veggies and server over a bed of rice.

notes

If you just want a quick meal, forgo marinating and skewer veggies, spray with cooking spray sprinkle with BBQ seasoning and your meal will be done in about 45 Minutes,
