Cottage Cheese Apple Pancakes

Ingredients

  • 1 large or 2 small Apples (about 3/4 cup grated),
  • 1/2 Cup small-curd Cottage Cheese,
  • 2 large Eggs,
  • 1/4 tsp. Cinnamon,
  • 1/4 tsp. Nutmeg (optional),
  • 1 Tbsp. Maple Syrup,
  • 1/4 tsp. Salt,
  • 1/2 Cup Flour,
  • 1 tsp. Baking Powder.

    Peel, core and grate the apples into a mixing bowl. Thoroughly mix in the cottage cheese, eggs, cinnamon, nutmeg, maple syrup and salt. Sprinkle in the flour and baking powder and stir well.

    Butter or oil a heavy griddle and place it on medium heat. For each pancake, ladle 1/4 cup of the batter onto the hot skillet. When bubbles form on the top and the bottoms are browned, flip the pancakes over and browned, flip them over and brown on the other side.
