Chicken Burritos

This is a low-fat recipe.

ingredients

  • 1 package low fat soft tortillas
  • 2 cups cooked, shredded chicken breast
  • 1 package taco seasoning mix
  • 1/4 cup water
  • 1/2 cup salsa
  • 2 tbsp chopped black olives
  • 1-16 ounce can refried beans, heated
  • 1 cup reduced fat, shredded cheddar cheese
  • 2 cups shredded lettuce
  • 1 cup chopped tomato

directions

Cook chicken breast in slow cooker on low for 4 hours or boil in water for 30 minutes. Cool and slice thin or shred. Place chicken, taco seasoning mix and water in skillet. Bring to a boil and reduce heat. Simmer uncovered for 5 minutes. Stir in salsa and black olives. Heat tortillas. Spoon refried beans on tortilla, top with chicken mixture, cheese, lettuce and tomato. Serve immediately.
