CLASSIC ITALIAN PASTA SALAD
ingredients
- Salad Ingredients:
- 2 cups cooked rotini pasta, drained (about 1 cup uncooked)
- 1 - 14 oz artichoke hearts, drained and cut into bite-sized pieces
- 1/2 cup chopped red pepper
- 1/2 cup chopped green pepper
- 1 cup cubed provolone cheese
- 1 carrot, cut into julienne strips
- 1/4 cup minced red onion
- 1/2 cup pitted, sliced Kalamata olives
- 1/4 lb salami, chopped
- Dressing:
- 1/3 cup extra virgin olive oil
- 2 Tbsp red wine vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp sugar
- 1/2 tsp dry mustard
- 3-4 Tbsp finely chopped fresh basil, or to taste

1. Combine all salad ingredients in large serving bowl.

2. Whisk dressing ingredients together in small bowl. Pour over pasta. Toss to coat.

3. Cover and refrigerate 2 hours or overnight. Toss before serving.
