Baked Chicken & Ricotta Bowls
easy quiche like recipe that can be used as an appetizer or main dish.
ingredients
- 1 9 inch refrigerated pie crust
- 2 chicken breast haves, cooked and diced
- 1 cup ricotta cheese
- 1/2 cup shredded cheddar
- 1/4 cup Parmesan
- 2 eggs lightly beaten
- 2 tsp Dijon mustard
- 1/4 cup chopped parsley leaves
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 375°

Divide crust into 8 peices and shape each piecfe into a ball. Press the balls into the bottom and up the sides of an 8 cup muffin tin. set aside

in a large bowl combine all remaining ingredients. Mix well. Spoon mixture into prepared muffin cups and top with a sprinkle of extra Parmesan cheese. Bake 20 mins. until a knife inserted near the center of 1 cup comes out clean and crust is golden.
notes
For easier prep use some chicken cooked in a previous nights recipe.
