NiNi's BBQ Chicken Quesadilla
A delicious quesadilla that can be made as a snack or as a meal.
ingredients
- 2 chicken breasts (cut in to small pieces)
- 4 medium sized flour tortillas
- 1/2 cup BBQ sauce
- 1/4 cup scallions, chopped
- 1/4 cup olives, sliced or chopped
- 1 1/2 cups shredded cheddar or monterey cheese
- 1/4 cup salsa or pico de gallo
- 1/4 sour cream
- 3 T butter
- 1T olive oil
- 4-5 sprigs of cilantro

In a large nonstick frying pan, add 1 T olive oil, and set on medium heat. Salt and pepper chopped chicken and add to the pan. Cook for two minutes or until the chicken starts to turn opaque.

Add 1/2 cup of BBQ sauce to the pan to coat the chicken. Cook for another 2 minutes or until there is no pink left in the chicken. Set aside on a paper towel.

Turn the heat down to medium low. Wipe the pan clean and add 1 T butter. Add one tortilla and coat with the butter in the pan. Let fry for approx. 20-30 seconds or until the tortilla begins to puff. Immediately turn the tortilla over and repeat with the other side. Add more butter if needed. Take the tortilla and set aside on a paper towel. Repeat with the remaining tortillas.

Turn heat to low. Add another T butter and place a puffed tortilla in the pan and top with 1/4 cup cheese, 2/3 cup cooked BBQ chicken, 1/8 cup scallions, 1/8 cup olives, and then sprinkle with more cheese. Add the second tortilla on top and fry until the bottom starts to crisp brown. Flip the tortilla and crisp the top side. Make sure all the cheese is melted and then place tortilla on a plate. Cut in to wedges and add a dollop of salsa and sour cream to the top. Sprinke with a few cilantro leaves. You can also drizzle some more BBQ sauce over the entire tortilla if desired. Serve warm.

Feel free to add or substitute any toppings you prefer. Also add amounts of toppings as desired for taste or preference.
