Amy's Tortilla Soup
Tomato based tortilla soup with layers of sliced avocado, tortilla chips and cheese.
ingredients
- 2 Tbsp Olive Oil
- 1 Diced Yellow Onion
- 1 Bunch Cilantro
- 1 Tsp Cumin
- 1 Can Diced Tomatos
- 1 Tsp Garlic Powder
- 8 Cups Chicken Broth
- 2 Avocados
- 1 Bag Tortilla Chips
- 1 1/2 Cups Mexican Cheese Blend
directions
Heat olive oil in large pot over medium heat. Add onions and saute until clear. Add can of tomatos and heat until simmer. Add cumin, garlic powder, and chicken broth and heat until boil. Using a handheld blender, blend until smooth. Add chopped cilantro. Layer sliced avocado, tortilla chips and cheese in center of soup bowls and spoon soup over top with chips and such peeking out. Serve immediately.
