Caitlin's Grilled Flank & Mushrooms
This is definitely my “go to” recipe for flank steaks! Although I usually dice up half an onion in place of the shallots.
ingredients
- 3 1/2 pounds flank steak
- 4 large shallots
- 1/3 orange juice
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 teaspoon ginger
- Accompaniment: portabella and cremini mushrooms
- 1 1/2 pounds portabella mushrooms
- 1 1/2 pounds cremini mushrooms
- 3 large shallots
- 1 stick (1/2 cup) unsalted butter
- 4 green onions
- 5 tablespoons soy sauce
- 1/4 cup honey

Chop shallots and place in zip-lock along with liquids ginger and steak. Marinade no less then 2 hours and up to 2 days.

Chop mushrooms and shallots and saute’ skillet cook half of shallots in half of butter over moderate heat until liquid mushrooms give off is evaporated, about 15 minutes. Transfer portabellas to a bowl and keep warm, covered. Add salt and pepper to taste. .In a bowl whisk together soy sauce, and sugar. Add mixture to mushrooms. Boil mixture 3 minutes, or until liquid is reduced slightly.Prepare grill.

Grill meat for 7-9 minutes on each side and then place on cutting board to “rest” for about 5 minutes. Slice steaks and spoon the Mushrooms on top.
