Better Blueberry Pancakes
Delicious and good for you.
ingredients
- 1/2 c. reduced-fat buttermilk
- 1/2 c. whole-grain oat flour
- 1 lg. egg white, lightly beaten
- 1/2 tsp. baking soda
- 1/4 ts. vanilla extract
- 1/4 tsp. salt
- I Can’t Believe It’s Not Butter! spray
- 1/2 c. fresh blueberries
- Sugar-free, low-calorie pancake syrup

In a small bowl combine flour, egg white, baking soda, vanilla and salt. Whisk until just blended. Stir in blueberries. Let stand 10 minutes.

Heat a large not stick skillet over medium heat until a sprinkle of water sizzles on it. Briefly remove the pan from heat to spray with butter spray. Return pan to heat. Pour the batter in 1/8 c. dallops onto skillet. Cook for about 2 minutes on each side or until done.
