CARROT CAKE
Who’s kidding who...this is all about the icing. Cake is delicious and easy to make if you have a cuisinart to grate the carrots!
ingredients
- CAKE:
- 1 1/4 salad oil (sunflower)
- 2 cups white sugar (or can do half white and half brown)
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ginger
- 1 tsp mace
- 1 tsp nutmeg
- 4 tsp cinnamon
- 4 eggs
- 3 cups grated carrots
- walnuts/pecans
- ICING:
- 8 oz cream cheese
- 1/2 cup butter
- icing sugar
- OJ
- 1 tsp vanilla
- 2 tbsp honey
directions

Mix wet ingredients
- 2
Add dry ingredients
- 3
Mix together (don’t over mix)
- 4
Bake at 350 degrees for 35 mins in a greased pan
- 5
Let cool and then ice
