Mixed Greens with Feta and Dried Cranberries
A simple and delicious salad, and we all love this vinaigrette! For variety, try substituting almonds or pecans for the walnuts, and blue cheese for the feta.
ingredients
Salad- 6-8 cups mixed greens or green leaf lettuce, torn into bite-size pieces
- 1/2 cup dried cranberries
- 1 cup chopped toasted walnuts
- 1 cup feta, crumbled
- Vinaigrette
- 1/2 cup olive oil
- 1/4 cup cider vinegar
- 1/4 cup sugar
- 1/2 medium onion, chopped
- 1/2 teaspoon paprika
- 1/4 teaspoon dry mustard
- 1/8 teaspoon pepper
- 1/4 teaspoon celery salt
directions
Combine lettuce, dried cranberries, walnuts, and feta cheese in a large bowl. In separate bowl, whisk together all vinaigrette ingredients. Add vinaigrette to salad, tossing to coat. Serve immediately.
