Lemon Squares aka Dream Bars

ingredients

  • Crust
  • 1 1/2 cups flour
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • Filling
  • 1 cup brown sugar
  • 1/2 cup coconut
  • 2 tablespoons flour
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • Frosting
  • 1 cup powdeered sugar
  • 1 tablespoon melted butter
  • Lemon rind fron 1 lemon
  • 1 teaspoon (or more) lemon juice to make spreading consistency

    Mix first three ingredients in food processor until mixture has the consistency of pie dough. Pack in a buttered 9 X 9 pan. Bake for 10 minutes at 275 degrees.

    Mix filling ingredients and spread on top of baked crust. Bake for 20 minutes at 325 degrees or until set. Cool.

    Beat frosting ingredients until smooth. Spread on baked mixture when cool but not quite cold.

    Cool. Cut into squares

notes

If you use a 9 X 13 pan make 1 1/2 recipes and bake longer.
