Maple Glazed Root Vegetables
ingredients
- 4 cups assorted root vegetables cut into 1/2 inch pieces
- 1/2 cup chicken broth, orange juice or water
- 2 tbsp. butter or olive oil
- 1/4 cup maple syrup or honey
- 1/2 tsp. salt
- 1/4 cup fresh parsley, green onions, basil or oregano, chopped

Toss everything, except herbs, into a heavy saucepan and bring to a boil. Cover pot, reduce heat to a simmer and continue cooking until the vegetables are almost tender, about 12 minutes.

Uncover the pot, turn the heat to medium-high and cook for 3 to 4 minutes more, stirring gently and shaking until the remaining cooking liquid reduces and glazes the vegetables.

At the last moment, toss in your choice of fresh herbs.
notes
A combination of carrots, parsnips, turnips, onions, sweet potatoes and potatoes works well.
