Carrot Crunch
ingredients
- 3 cups of Carrots, cut into strips
- 1 tsp Brown Sugar
- 1 tsp Orange Zest
- 1 tbsp Butter or Margarine
- 1/2 cup Slivered Almonds

Toast almonds in oven until slightly browned. Cook chopped carrots in microwave until soft, about 2 minutes.

Spray medium sized skillet with non-stick spray and heat over medium heat. Add butter and brown sugar to skillet and cook until well mixed. Add carrots, orange rind, and almonds and coat thoroughly with buttery sugar glaze.
