Delicate, light shortbread-type cookies covered with confectioner’s sugar

  • 1 c butter

  • ⅓ c sugar

  • 2 tsp vanilla

  • 2 c sifted all-purpose flour

  • 1 c chopped pecans

  • confectioner’s sugar

  • Cream butter with sugar. Add vanilla and 2 tsp water. Mix well. Blend in flour and pecans. Chill 4 hours.

  • Preheat oven to 325 degrees. Shape in balls or fingers. Bake on ungreased cookie sheet for 20 minutes. Cool slightly.

  • Roll in confectioner’s sugar and place on wire racks.

I don't remember where I got this recipe. It's written on a file card that I've had for nearly 30 years. It's now dog-eared and has food spots all over it. I make these every Christmas season, usually three or more batches.
