Delicate, light shortbread-type cookies covered with confectioner’s sugar
1 c butter
⅓ c sugar
2 tsp vanilla
2 c sifted all-purpose flour
1 c chopped pecans
confectioner’s sugar
Cream butter with sugar. Add vanilla and 2 tsp water. Mix well. Blend in flour and pecans. Chill 4 hours.
Preheat oven to 325 degrees. Shape in balls or fingers. Bake on ungreased cookie sheet for 20 minutes. Cool slightly.
Roll in confectioner’s sugar and place on wire racks.

PREP TIME: 15 minutes + 4 hours chilling
TOTAL TIME: 5 hours
I don't remember where I got this recipe. It's written on a file card that I've had for nearly 30 years. It's now dog-eared and has food spots all over it. I make these every Christmas season, usually three or more batches.
