Mediterranian Green Bean Salad
Nice light summer recipe
ingredients
- 2 pounds green beans - trimmed and cut
- 4 ounces of feta cheese
- 6 scallions sliced
- 2 pints of cherry tomatoes cut in 1/3
- Dressing:
- 2 tablesoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon sugar
- 2 cloves of garlic
directions
Blanch the green beans - cook them for 4-5 minutes in boiling water and then put them in a cold ice bath. Mix the dressing and then put together. Sprinkle the cheese on top.
