Kicked Up Sausage Macaroni and Cheese
ingredients
- 8 tbsp. unsalted butter
- 1/2 lb. elbow macaroni
- 1 lb. spicy pork sausage, removed from casings and crumbled
- 1 cup chopped yellow union
- 1/2 cup chopped green bell pepper
- 1 tbsp. of Emeril Essence
- 4 tsp. minced garlic
- 1/2 cup all-purpose flour
- 3 cups room temperature whole milk
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1/8 tsp. cayenne powder
- 3 cups grated sharp cheddar cheese (8 oz)
- 1/2 cup fine dry bread crumbs

Preheat oven to 350 degree.

Butter a large casserole dish.

Cook macaroni until al dente. Drain and rinse with cold water. Drain well.

Cook sausage over med-high heat until browned. Remove from pan and majority of fat.

Add onions, bell peppers and 1 tsp. of Essence and cook for 3 mins until soft. Add garlic and cook for another minute.

Melt butter in large, heavy saucepan over medium heat. Add flour and stir constantly with a wooden spoon, cook over medium heat until thick. Do not let the four brown. Whisking constantly, add the milk in a steady stream until thick and smooth. Remove from heat, add salt, pepper, cayenne, and 2 cups of grated cheese and stir well. Add noodles, sausage, and vegetables and stir well to combine. Pour into baking dish.

In mixing bowl combine 1 cup of cheese with the bread crumbs and 2 tsp. of Essence. Sprinkle mixture of macaroni and bake about 25 minutes.
