POPPY SEED AND NUT ROLLS
Polish Bread
ingredients
- Dough:
- 12 c flour
- 1 1/2 c sugar
- 1 lb butter
- 1 lb farmer’s cheese
- 4 eggs
- 1 qt milk
- 1 t salt
- 1 lg block or 3 dry yeast
- Poppyseed filling:
- 1 lb poppyseeds
- 1/2 c milk
- 2 c sugar
- 2 T butter
- 1 egg
- 1/2 t lemon juice
- raisins

- Nut filling:
- 1 lb. walnuts chopped fine
- 8 oz coconut
- 1 t vanilla
- 1/2 c milk
- 2 c sugar
- 1 egg

Cook fillings and let cool.

For dough:

Melt butter w/milk and sugar. Take off heat and let get luke warm. Add yeast. Beat eggs and cheese together until smooth. Add to other mixture. Add dry ingredients 1/3 at a time. Keep kneading. Add about 3-5 c more flour.

Let rise until double in a greased bowl cover with a rag

Punch down and then cut into balls for each roll. Let rise again 15 min.

Take each roll and roll with rolling pin to a rectangle. Fill with either poppyseed or nut filling and then roll. Put 2 rolls to a baking sheet and let rise again. Then bake for 25-30 min until golden.
