Cabbage Rolls
This an annual favorite from our neighbors (the Goodmans) New Year’s day party
ingredients
- 2 lbs ground beef
- 1 onion, diced
- 1/2 cup bread crumbs
- 3 eggs
- 1/2 cup milk
- 3 cups of cooked white rice
- salt and pepper to taste
- 1 large head green cabbage
- 3 cans tomato sauce
- 1 can sauerkraut

In skillet, saute onion in olive oil until tender and browned.

In large bowl, add bread crumbs, milk, eggs, onion, salt and pepper and mix.

Add ground beef and rice to bread crumb mixture and gently mix. Check for seasoning.

In large pot of boiling water, submerge head of cabbage. While boiling, peel cabbage leaves off as they loosen and set aside. If they are not tender enough, put them back in boiling water until they are pliable enough to roll.

Take about 2 T. of meat mixture and place at bottom of cabbage leaf. Fold sides in and roll to form a little package. Place in crock pot in layers.

Pour tomato sauce and sauerkraut (undrained) over cabbage rolls and cook on high 4 hours or low 6-8 hours.
