FIESTA SHRIMP APPETIZERS

ingredients

  • 1 lb large shrimp in shells, fresh or frozen (I used frozen)
  • 2 garlic cloves, minced
  • 1/2 tsp. lime zest, finely shredded
  • 1/4 cup lime juice (approx. 1 lime)
  • 2 tbs. olive oil
  • 2 tbs. green onions, finely chopped
  • 1/4 cup fresh Anaheim pepper, chopped (*if you can find any! I couldn’t!)
  • 1 tbs, chopped cilantro
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

    • Thaw shrimp, if frozen.

  • 2

    • Peel & devein.

  • 3

    • Boil 3 cups of water in a medium saucepan.

  • 4

    • Add shrimp.

  • 5

    • Simmer, uncovered for about 1 minute, stirring occasionally, until the shrimp turn pink

  • 6

    • Rinse under cold running water. Drain.

  • 7

    • In a ziplock bag, combine garlic, lime zest & juice, olive oil, onions, *Anaheim pepper, cilantro, sugar, salt & pepper.

  • 8

    • Add shrimp to bag. Seal. Turn bag to coat shrimp with marinade.

  • 9

    • Refrigerate 2-3 hours, turning occasionally.

  • 10

    • To serve, drain shrimp, discarding marinade.

  • 11

    • Line a platter with shredded lettuce. Place shrimp in center.
