Honey & Soy-Roasted Spiced Chicken

A healthy and easy dinner that is great for the working week.

ingredients

  • 8 skinless bone-in chicken thighs
  • 2 sweet potatoes (500g), peeled and cut into chunks
  • 2 red onions, cut into segments
  • 2 red or yellow peppers, de-seeded and sliced
  • 8 garlic cloves, unpeeled
  • Low fat cooking spray
  • 1 tbsp balsamic vinegar
  • Large handful of fresh coriander
  • 4 tbsp low fat plain yoghurt
For the marinade:
  • 2.5cm piece of fresh ginger, peeled and grated
  • 1 1/2 tbsp clear honey
  • 4 tbsp light soy sauce
  • 1 mild red chilli, de-seeded and chopped
  • Juice of 2 limes

    1. In a large bowl, mix together the ingredients for the marinade, add the chicken thighs and stir to coat. Leave to marinade for at least 30 minutes, or for up to 4 hours in the fridge.

    2. Preheat the oven to gas mark 6/ 200°C/fan oven 180°C. Mix together the vegetables in a roasting tray, season and spray liberally with the low fat cooking spray. Drizzle the balsamic vinegar over and toss everything together well. Place the chicken on the top with any extra marinade.

    3. Place in the oven to roast for 35-40 minutes, until the chicken is cooked and the vegetables are nicely browned.

    4. Serve with lots of coriander sprinkled over and 1 tablespoon of yoghurt each.
