Who needs “Famous Ray’s”?
ingredients
- Dough:
- 2 packages (5 tsp) active dry yeast
- 2 1/4 cups warm water (105 - 115 deg F)
- 2 tsp sugar
- 1/4 cup olive oil
- 5 cups (25oz / 780 g) bread flour (plus a little extra for board, etc)
- 1 tablespoon table salt
- Some corn meal to help slide pie around
- Sauce and toppings:
- 1 large can of diced tomatoes in puree
- 1 package sausage (optional) or ground beef
- 1 tablespoon of tomato paste
- 1 tablespoon oregano
- 1 small diced onion
- 16 oz. mozzarella cheese- garlic powder to taste
- crushed red pepper to taste

Dissolve yeast in warm water and sugar and let stand until foamy (around 5 minutes)

Combine with oil, salt and flour in mixer

Knead on low until smooth (8-10 minutes), adding flour if the consistency is too wet

Put dough in lightly oiled bowl, cover and place in warm location while waiting for dough to rise

Brown any meat toppings (sausage, ground beef, bacon, etc), with onion, garlic and drain fat

Add remaining sauce ingredients and simmer

Preheat oven to 500F about 30 minutes before starting to form pies

After the dough has doubled in size 1 1/2 -2 hours), punch down, cut into two and form into pies. Remember to keep your board floured.

Put a liberal amount of cornmeal and some flour on the peal

Put dough on peel, spread out sauce mixture and cheese

Put more cornmeal on your pizza stone, or cooking tray

Slide pizza into oven, and cook until cheese is golden brown (about 10-15 minutes)
