Spicy Sausage & Pepper Penne
ingredients
- 8 oz penne pasta, uncooked
- 1 lb.Italian turkey sausage links (hot or mild)
- 1 each green, red and yellow bell peppers, cut into thin strips
- 1/4 c. chopped onion
- 2 garlic cloves, minced
- 1 can (14.5) oz diced tomatoes, undrained
- 1 can (8 oz) tomato sauce
- 2 tsp. Italian seasoning
- 1/4 c. grated Parmesan cheese

1. Cook pasta in a large pot; drain and keep warm.

2. Cook sausage in a large skillet over medium-high heat 14-16 minutes, turning occasionally, until sausage is lightly browned and no longer pink. Remove from skillet; cut diagonally into 1" pieces and set aside.

3. In same skillet, cook peppers, onion and garlic over medium heat 6-8 minutes, stirring occasionally, until peppers are crisp-tender. Add sausage, tomatoes, tomato sauce and seasoning mix. Cook and stir 1-2 minutes.

4. Transfer pasta to a large bowl, pour sauce over pasta, tossing to coat. Sprinkle with Parmesan.
