Cauliflower Cheese Soup
This is Chloe’s favorite soup.I usually serve it with biscuits.
ingredients
- 2 cups potato chunks
- 2 cups cauliflowerets
- 1 cup chopped carrot
- 3 medium cloves of garlic
- 1 cup chopped onion
- 1 1/2 teaspoon salt
- 4 cups water or salt
- 1 1/2 cups grated cheddar
- 3/4 cup milk
- 1/2 teaspoon dill weed 1/4teaspoon dry mustard
- black pepper
- 1 1/2 cups more cauliflower florets
- 3/4 cup buttermilk

Place the first 7 ingredients in a large pot.Bring to a boil, cover,and simmer 15 minutes.Let cool 10 minutes.Puree the entire mixture in the blender until smooth and creamy.

Pour back in pot.Then whisk in the cheese,milk,and seasonings.Heat the soup gently.

Steam the remaining cauliflower until tender.Add to the soup.

Just before serving whisk in 3/4 cups buttermilk.

Serve topped with extra grated cheese.

Serve immediately.
