Kahlua Truffles
A great Christmas gift for your favorite chocoholic!!
ingredients
- 12 oz bittersweet chocolate, chopped
- 1/4 cup unsalted butter, cut in pieces
- 1/4 cup heavy cream
- 1 TBL instant espresso powder dissolved in 1 TBL boiling water
- 2 TBL Kahlua
- 1 cup cocoa powder for coating truffles
- or 1 cup mixture of confectioners sugar and cocoa powder

In a double boiler melt chocolate and butter with cream and espresso, simmering and stirring until smooth.

Remove top of double boiler from heat and still in liqueur

Cool mixture, covered for at least 3 hours or until firm.

Form rounded teaspoons of mixture into balls and roll in coating mixture of choice. Store in refrigerator.
