Coconut Pound Cake
ingredients
- 1 cup butter
- 1/2 cup vegetable shortening
- 3 cups sugar
- 5 large eggs
- 3 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 teaspoon imitation coconut flavoring
- 1 teaspoon imitation rum extract
- Icing:
- 1/2 cup sugar
- 1/4 cup water
- 1/2 teaspoon almond flavoring

Preheat oven to 325 degrees. Grease and flour a tube pan.

Beat together butter and shortening. Add sugar and eggs, one at a time, beating well after each addition. Sift dry ingredients together. Add dry ingredients alternately with milk. Add flavoring. Pour into tube pan. Bake for 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean.

In a small saucepan, combine all ingredients. Boil for 1 minute and brush over warm cake.
