Chili Chicken and Pasta
ingredients
- 6oz angel hair pasta
- 3 fresh ears of sweet corn
- 4 small skinless, boneless chicken breast
- 1 1/2 tsp chili powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 cup olive oil
- 2 medium tomatoes, sliced
- 3 tablespoons lime juice

Cook pasta and corn in lightly salted boiling water according to pasta package directions. Drain in colander, rinse with cold water.

Meanwhile, sprinkle chicken with 1 tsp of the chili powder, 1/4 tsp black pepper, and 1/4 tsp salt. In a large skillet, cook chicken in 1 Tbsp ho oil over medium heat for 8 to 10 minutes or until chicken is no longer pink, turning once.

For dressing, combine remaining 3 Tbsp oil, remaining 1/2 tsp chili powder, and lime juice; shake to combine.

Cut corn from cob. Add corn and tomatoes to pasta, toss with dressing. Sprinkle with salt and pepper. Serve with chicken.
