Shrimp With Creamy Tomato-Basil Sauce

ingredients

  • 2 cups (8 oz.) Penne
  • 1 tsp. olive oil
  • 1 large onion, chopped
  • 1/2 cup fresh basil leaves, loosely packed
  • 1 tsp. minced garlic
  • 1 1/2 cups marinara sauce
  • 1/2 cup heavy or whipping cream
  • 1 lb. already-peeled raw shrimp

    Cook pasta 11-13 minutes.

    Heat oil in skillet over medium heat. Add onion, cook about 3 minutes, until soft. Reduce heat add garlic, marinara sauce and cream. Reduce heat to low and stir well. If shrimp are frozen, put in colander and run warm water over them to defrost slightly.

    Add shrimp to skillet. Simmer, stirring frequently to turn shrimp, about 5 minutes, until shrimp are pink. Meanwhile, coarsely chop basil and set aside. When shrimp are done, remove skillet from heat. Stir in basil.

    Drain penne and place a portion on each plate. Top each serving with shrimp and sauce and serve.
