Greek Pasta Salad
ingredients
- 12 oz penne pasta
- 2 c cherry tomato, quartered
- 1 1/2 c zucchini, chopped
- 1 medium cucumber, sliced in halves
- 4 green onions, sliced
- 1/3 c pitted kalamata olives, halved
- 1/2 c olive oil
- 1/2 lemon juice
- 2 Tbsp fresh basil, crushed
- 2 Tbsp fresh oregano, crushed
- 4-6 garlic cloves, minced
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 c feta cheese

1. Cook pasta. Drain with cold water

2. In a large bowl toss together the cooked pasta, tomatoes, cucumber, green onions, and olives.

3. In a screw top jar combine the olive oil, lemon juice, basil, oregano, garlic, salt, and pepper. Cover and shake well. Drizzle over pasta mixture, toss to coat.

4. Cover and chill at least 2 hours. To serve, add feta cheese, toss.
