Mushroom shrimp Creole
ingredients
- 6 slices of bacon
- 3 medium onions, chopped
- 4 celery ribs, chopped
- 2 medium bell peppers, chopped
- 2 6 oz cans tomatoes or 12 fresh tomatoes, peeled
- 1 T oregano
- 1 tsp thyme
- Dash hot sauce
- Salt and pepper to taste
- 1 doz fresh large mushrooms, sliced, or 2 cans sliced mushrooms
- 3 Lbs shrimp (boiled, peeled and deveined)
- Cooked Rice

In a large skillet, fry bacon until crisp and remove. Saute’ onions,

celery and peppers in bacon drippings until tender. Mash tomatoes with their

juices and add to pan. Add remaining seasonings. Cook for 1 hour on low,
- 4
stirring often. Add mushrooms, and cook for another 30 minutes. In a large
- 5
bowl, add shrimp to sauce when ready to serve. Serve with rice.

Makes 8 to 10 servings
